Sweet Indian Curry Chicken (Instant Pot)
Indian cuisine is renowned for its rich and complex flavors that come from the wealth of spices and seasonings used in their dishes. For instance, some individuals suffer from allium intolerance or allergy which prevents them from consuming ingredients such as garlic and onions. What you’ll need:
1 TTK Sweet Indian Curry Seasoning Blend packet
2-3 lbs boneless, skinless, chicken thighs
2 tbsp butter
2 tbsp tomato paste
1 cup tomato puree
1 cup water
3/4 cup whipping cream, unsweetened coconut milk or unsweetened coconut cream
2 tbsp parsley chopped (optional)
Cooking Instructions:
1. Press sauté on your Instant Pot .
Add the butter and cook until the butter has melted.
2. Stir in:
Tomato puree
Tomato paste
Water

Cook for about 3 to 5 minutes.
3. Add the chicken thighs. Add more water if the chicken isn’t fully submerged in liquid (the pressure cooking won’t work properly otherwise).
4. Hit cancel to stop sauté mode and then hit pressure cook, close the lid til you hear it chime that it’s locked, and set the timer for 5 minutes. Make sure the top of the lid is set to “sealed”
5. Once it’s done, wait until the natural release cycle is complete (if you had it set to venting this would happen faster but you don’t want that, so just wait til that silver round thing indents into the lid again, when there is still pressure in the pot the silver button will be flush with the top) should take about 10 minutes. Remove the lid once the pressure naturally releases.
6. Remove cooked chicken thighs from sauce. Fork shred just enough to pull the meat apart a bit, then add it back to sauce.
7. Press sauté. Add the whipping cream (or coconut cream) to sauce and stir it in, let it come together for about 5 minutes and then press cancel or keep warm.
The sauce should thicken and reduce a bit. You don’t want it to reduce too much.
8. You can add chopped parsley if you want, serve it over jasmine rice or with warm naan, or both!
